Well, we still have some snow on the ground in Pittsburgh, but the rain is supposed to melt it this week. Yay! I have never been so desperate to get outside. Being stuck at home with a new baby and four other little kids is exhausting. Between cleaning and getting everyone dressed and fed, the entire day slips away without getting anything accomplished.
Unfortunately, all of my freezers are empty too. We ate the healthy stir fry “packs” that I froze for the crockpot/Instant Pot (the honey garlic chicken and snow peas was my favorite) and trying to figure out what to make for dinner tonight is stressful enough, let alone making more freezer meals. The good news is that I was able to reuse some of our favorite recipes from last year to come up with a plan for this month.
For the first time ever I am LOVING my Instant Pot. I came up with the idea to freeze stir fry “packs” with meat, sauce, and veggies that I could cook in my Instant Pot or crockpot. Oh my gosh, they are so good. If you want to make them too, I’ll share my recipes and shopping list below.
Geez, I can’t believe it’s March already. We spent February hibernating with a newborn, so now I’m craving spring. I have my eye on a deluxe trampoline and I can’t wait to get my kids outside. In case you were wondering, being stuck inside with five little kids is crazy. And loud.
