Here’s a new recipe for Crockpot Mexican Stuffed Peppers with Ground Turkey. It’s a healthy and delicious recipe that’s super easy to make.
The vegetarian Mexican Stuffed Peppers in my Meat-Free Slow Cooker Freezer Meals eCookbook are my husband’s favorite recipe so I decided to create a version with ground turkey. They’re delicious!
Here’s what I love about this recipe:
- It’s a one-pot crockpot meal.
- The stuffed peppers taste AMAZING topped with shredded cheese, salsa, and guacamole.
- You can cook it in your crockpot or freeze it for a busy weeknight.

Crockpot Mexican Stuffed Peppers with Ground Turkey
Yields: 6 servings
Ingredients
- 6 sweet bell peppers (I use a mix of red, orange, and yellow)
- 1 pound ground turkey
- 15oz can black beans, drained and rinsed
- 1 small yellow onion, peeled and diced (one cup)
- 1 cup frozen corn
- The juice from one lime
- 1 tablespoon honey
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1/2 teaspoon garlic salt
- 1/4 teaspoon crushed red pepper flakes
Directions
- Slice off very tops of peppers and set aside. (You can dice the tops and freeze for soup/chili or add them to the stuffed pepper filling in Step 2.)
- In a large bowl, combine remaining ingredients.
- Stuff peppers with filling and place in crockpot.
- Cook on “low” setting for 6 hours in a 6-quart crockpot.
To Freeze and Cook Later
- Label a gallon-sized plastic freezer bag with the name of the recipe, cooking instructions, and “use-by” date (which is usually three months from the prep day).
- Slice off very tops of peppers and set aside. (You can dice the tops and freeze for soup/chili or add them to the stuffed pepper filling in Step 2.)
- In a large bowl, combine remaining ingredients and stuff peppers.
- Place stuffed peppers in freezer bag, seal, and freeze for up to three months.
- When ready to cook, thaw overnight in fridge or in water in the morning. Cook on “low” setting for 6 hours in a 6-quart crockpot.
Serve over rice. Top with your favorite taco toppings, like shredded pepper jack cheese, guacamole, and salsa. YUM.
Just double checking – do you put the turkey in the bell peppers raw or do you brown it first? Thanks!
I add it raw, but you could brown it if you want to.
Do you wrap the peppers individually or use a food sealer?
You can use a food saver or a regular freezer bag.
Have you ever added rice to the stuffing?
Also, do you need to put water or another liquid in the crockpot around the peppers?
Nope!
I’d added dry (uncooked) rice to stuffed cabbage before. I’ve also added dry (uncooked) quinoa to my stuffed peppers.
