Spring weather has finally made its way to Pittsburgh. Yay!! I’m trying to get my kids outside as much as possible and I’m almost done going through all of our winter clothes, boots, etc. I even got motivated on Monday and prepped 12 freezer meals so we can play outside after school, and drive our older kids to after-school activities, and not have to worry about dinner.

Kelly asked me to share some of my favorite easy keto freezer meals with you because, in just over a year, I lost 85 pounds following a low carb, ketogenic lifestyle! Meal planning has been key to my success with keto so I’m excited to share how I made eight keto freezer meals in 90 minutes last week (free recipes and shopping list below!).
Spring is right around the corner and I’ve never been so desperate to get outside. Being stuck at home with five little kids is exhausting. Between cleaning and getting everyone dressed and fed, the entire day slips away without getting anything accomplished.
Unfortunately, all of my freezers are empty too. We ate the healthy stir fry “packs” that I froze for the crockpot/Instant Pot (the honey garlic chicken and snow peas was my favorite) and trying to figure out what to make for dinner tonight is stressful enough, let alone making more freezer meals. The good news is that I was able to reuse some of our favorite recipes from last year to come up with a plan for this month.
Geez, I can’t believe it’s March already. We spent February hibernating with a newborn, so now I’m craving spring. I have my eye on a deluxe trampoline and I can’t wait to get my kids outside. In case you were wondering, being stuck inside with five little kids is crazy. And loud.
We already ate all of the freezer meals that I prepped for the new year, so I’m back to relying on my crockpot to keep us afloat. I came up with a list of 12 easy and healthy crockpot freezer recipes for this month that I’m super excited about.
